Roasted Smoked Tofu with corn salad and walnut vinaigrette

Preparation

Wash the corn salad and spin-dry. Mix together sherry vinegar, walnut oil, lemon juice and vegetable stock and season with salt and pepper.


Roughly chop the walnuts. Peel and finely chop the scallion. Cut the Smoked Tofu into small cubes and fry in oil until crispy. Add scallion and let it stew briefly. Add chopped walnuts, flip them several times until golden brown and keep warm.

Marinate the corn salad with the vinaigrette and arrange on plates. Sprinkle the lukewarm Smoked Tofu-walnut mixture on top.

200 gTaifun Smoked Tofu
1 tbspfrying oil
300 g corn salad
50 g walnuts
1scallion
3 tbspsherry vinegar (or walnut vinegar)
6 tbspwalnut oil, cold pressed
80 ml vegetable stock or wild mushroom stock
1 tsplemon juice
somefreshly grated black pepper
salt
balsamic creme for decoration
